Bison Burgers

 In the mood to try something new this weekend? Try this recipe. Yum! I have only showed you the ingredients. It’s up to you what quantity you choose. With a pound of meat, it should serve 3 people.

Ingredients:

• 1lb Bison (little or no spice- I usually just add a dash of salt and pepper)
• tomato
• goat cheese
• avocado
• bacon
• lettuce
• caramelized purple onion
• hamburger buns
• sweet potato and/or russet potatoes

Slice and dice all ingredients and place on separately as much as you like.

Did you know a bison and buffalo are two different animals? The American bison only lives in North America and the two main buffalo species live in Africa and Asia. What is the difference between a bison and buffalo?  Find it here.

Say what? Healthy crust?

 

Im always on the lookout for ways to incorporate healthy foods into our meals. Our family loves pizza and we usually eat it once a week. Most of the time on Mondays. No one wants to cook after the weekend and who doesn’t love pizza anyway. I haven’t met that person yet. So, I found this recipe for cauliflower pizza crust. I’m no good at baking anything. When it comes to using flour in a recipe, it never turns out right. I found this recipe and thought this was a great idea and tried it. Low and behold, it was a huge success. Everyone loved it! It was soft on the inside and slightly crunchy on the outside. A perfect combination. If you want to try something new here is my recipe.

Pizza crust combination:

Turn oven on 400 degrees

• 1 cauliflower head
(either graded or processed – then cooked in the microwave for 8 minutes – let it cool down)
• a dash of salt and pepper
• a sprinkle of cilantro, chopped up spinach leaves or chopped fresh basil
• add 1 egg,

Mix all ingredients above, then bake crust for 10 minutes.

• Add a layer of barbecue sauce of your choice first
• 1/4 cup Parmesan cheese, 1/4 cup buffalo cheese, 1/4 cup cheddar cheese
(you can use any cheese’s you have on hand – just make sure you include Parmesan)
• Big handful of tomatoes, chopped
• Red Onion, sliced
• Your choice of meat (I like to use shredded chicken or pork)

Cook for 15-20 minutes

Serves 3

Did you know that a cauliflower is grown from a seed?  Well, now you do. Cauliflower is a cruciferous vegetable that may help prevent cancer and is a good source of vitamin C. The orange cauliflower is suppose to be the most tasty. It’s suppose to be a little sweeter than the white kind. Purple cauliflower is suppose to be much better for you then white cauliflower. Not sure about the green one. Have you tried any of the these? Also, if you cook it for 30 minutes or more it decreases the health benefits by 75%. Go make your own cauliflower dish and tell me how it comes out.

Liquid Sunshine!

Our tree has lemons! It’s a great time of year for me. I get to start making lemonade. Even though they are a year round fruit, February is when the lemons are at one of their peaks (ready for pickin’). Then again in August. Yum!

Tip: If you only want to use a little bit of juice from your lemon and don’t want to cut open the whole thing (like me) this is what you do. Roll the lemon, stick a toothpick through it, squeeze out the juice, put the toothpick back through hole, refrigerate and save for later.

The Cake Ball Explosion!

I made these cake balls for Super Bowl Sunday. They turned out better than expected and quick to make (with a little help from the kids).

Here is the recipe:

1 1/4 cups of cake flower, sifted
1/2 cup granulated sugar
1 1/4 tsp baking powder
3/4 tsp salt
1/8 tsp ground nutmeg
1/2 cup buttermilk
1 egg, lightly beaten
2 tbsp butter, melted

Heat oven to 425 degrees F. Mix all dry then wet ingredients together. Bake 6-7 minutes. Col 5 minutes Add glaze and top with sprinkles or anything else you like.

Vanilla glaze recipe:
1 cup confectioners’ sugar
2 tbsp milk
1/2 tsp vanilla extract

A Little Piece of Heaven!

This place is yummy!
The meat was juicy and the fries were full of creamy flavor.
Nothing on the menu is healthy, but you don’t go there for that.
You go for the comfort of a full on burger, their specialty fries and a nice cold craft beer.

Where the Buffalo Get Eaten

So, I made these buffalo burgers (actually they were smaller, more like sliders).
OMG! They turned out great even my 7 year old ate them.
I’m on this kick at the moment where we are not eating flour (bread).
I didn’t use bread, but it wasn’t bunless. Instead I used sweet potato. Yum!

Sweet Potato Sliders

Recipe:
• 4 sweet potatoes
• 1 purple onion
• Shallots
• 1 tomato
• Garlic cloves
• 1lb ground buffalo
• 60z tomato paste
• cumin, pepper, other favorite spices

Slice sweet potatoes, season, and bake for 25 minutes at 350 degrees.
Brown chopped onion, shallots, tomato, and garlic.
Then add it to the buffalo, egg yolk, and tomato paste mixture.
Don’t forget to add the spices to the buffalo goodness.
Make patties and bake for 20 minutes.
Take out, put in the sweet potatoes and broil for 5 minutes. Done!
Make the buffalo patties with the sweet potato buns and add avocado slices with some spinach. Mmmm!!

Sweet Sprinkles!!

Every Friday morning I take the kids to our local donut shop.
It’s a sweet treat and they love it! We get donuts holes and jalapeño kolaches.
Yum! This morning we decided to change it up a bit and got donuts with sprinkles

Bacon Wrapped Meatballs

I made these last night and they turned out to be another winner. Try them!

Bacon is good with everything, right?  LOL!

Recipe:
• Bacon
• Ground beef
• Onions
• Mushrooms
• Eggs
• Garlic power
• Oregano
• Pesto

Mix all of your ingredients (except bacon), roll into balls, wrap bacon around each piece (use a toothpick to stick).

Bake at 400F for 30 minutes. Remove from the oven and put a dab of pesto on it. Back in the oven for 5 more minutes.

We ate ours with a side of cauliflower mashed potatoes.  Yum!

Homemade Creamy Tomato Basil Soup

Creamy Tomato Basil Soup

Recipe: (serves 4)

• 4 roma tomatoes (take seeds out)
• Italian seasoning
• 1/2 cup heavy whipping cream
• Butter
• Onion
• 6 spits of fresh basil leaves

You can add any veggies that you like to the list. Sometimes I add peas at the end.

Put all the ingredients in a blender and then cook on the stove for 15 minutes.

Don’t forget the cheese on toast to go with the soup. Yum!

Update: Ema Jones commented that she likes to add cottage cheese.  That sounds even more delicious!

Watermelon Sunday!

I love making agua’s frescas.  Always fresh and delicious!
For this one I used good ole’ fashioned watermelon, oranges, mint, and lemons.  That’s it!

Then I added some vodka to it.  LOL!

Hangover Remedy!

Just what the doctor ordered.

One of my all time favorite dishes growing up.
The best part is that they put hominy in it. Yum!
It’s hard to find restaurants that add it to the menudo.

Shrimp Cocktail Anyone?

Over the weekend I made this delicious shrimp cocktail.
I will be making it again soon.  It was a big hit in our household.

Authentic Shrimp Cocktail

(The story behind it all)
I grew up in a small town and there was this place called El Sinaloense.  They had the best shrimp cocktail I have ever eaten!  I moved away and have always been on the lookout for something that compares.  I have not been able to find a place that makes it the same way as it was in my hometown.  So, I decided to make my own.  Here you go!

Ingredients:

  • 2 lbs of jumbo shrimp
  •  1 red bell pepper
  • 2 cucumbers
  • 4 large avocados
  • 1 large purple onion
  • a large handful of cilantro
  • 3 fresh jalapenos
  • 2 serrano peppers
  • 6 limes
  • 2 small cartons of tomatoes
  • 3 teaspoons of horseradish
  • 4 dashes of worchestershire sauce
  • 5 dashes of tabasco sauce
  • 5 dashes of hot sauce
  • 1 cup of ketchup
  • 1.5 cups of orange juice
  • 4 cups of clamato juice
  • 2 cups of V8 regular vegetable juice
  • garlic, salt, and pepper to taste
