Notes from The Universe

The Magnificent Bloom!

Nature is beautiful!

We have a cactus in the front of our house which
only blooms during a certain time of year (now) and
only for a short time. It amazes me how it gets more
and more buds every year. It’s like a human being who
grows and grows as they get older with every birthday.

The next day……

Bam! And there you go, I got to see the bloom.
It is a spectacular piece of nature. All the buds
turned into opened flowers. Bee heaven. Beautiful!

It encompasses every little bit about me and the way I see things while on this crazy adventure called life.

This is a perfect gift!

I am going to hang it up in my new office so I can see all of the little sayings on a daily.

Where the Buffalo Get Eaten

So, I made these buffalo burgers (actually they were smaller, more like sliders).
OMG! They turned out great even my 7 year old ate them.
I’m on this kick at the moment where we are not eating flour (bread).
I didn’t use bread, but it wasn’t bunless. Instead I used sweet potato. Yum!

Sweet Potato Sliders

• 4 sweet potatoes
• 1 purple onion
• Shallots
• 1 tomato
• Garlic cloves
• 1lb ground buffalo
• 60z tomato paste
• cumin, pepper, other favorite spices

Slice sweet potatoes, season, and bake for 25 minutes at 350 degrees.
Brown chopped onion, shallots, tomato, and garlic.
Then add it to the buffalo, egg yolk, and tomato paste mixture.
Don’t forget to add the spices to the buffalo goodness.
Make patties and bake for 20 minutes.
Take out, put in the sweet potatoes and broil for 5 minutes. Done!
Make the buffalo patties with the sweet potato buns and add avocado slices with some spinach. Mmmm!!

Australia Here We Come!

So, my husband and I are going to Australia (Perth to be exact) for our friends birthday.  Yay!

We only have a two days to really venture out.

Sweet Sprinkles!!

Every Friday morning I take the kids to our local donut shop.
It’s a sweet treat and they love it! We get donuts holes and jalapeño kolaches.
Yum! This morning we decided to change it up a bit and got donuts with sprinkles

Beer for everyone!

I was craving pumpkin beer yesterday,
but they didn’t have the one I wanted so I decided to try something different.

So, I bought “Rogue Farms – Pumpkin Patch” beer.
It was really good and it doesn’t have any chemicals, additives or preservatives.
The Labyrinth was delicious too (brewed with licorice sticks and aged in oak barrels).
Now that’s my kind of beer. What are you drinking?

Bacon Wrapped Meatballs

I made these last night and they turned out to be another winner. Try them!

Bacon is good with everything, right?  LOL!

• Bacon
• Ground beef
• Onions
• Mushrooms
• Eggs
• Garlic power
• Oregano
• Pesto

Mix all of your ingredients (except bacon), roll into balls, wrap bacon around each piece (use a toothpick to stick).

Bake at 400F for 30 minutes. Remove from the oven and put a dab of pesto on it. Back in the oven for 5 more minutes.

We ate ours with a side of cauliflower mashed potatoes.  Yum!

Homemade Creamy Tomato Basil Soup

Creamy Tomato Basil Soup

Recipe: (serves 4)

• 4 roma tomatoes (take seeds out)
• Italian seasoning
• 1/2 cup heavy whipping cream
• Butter
• Onion
• 6 spits of fresh basil leaves

You can add any veggies that you like to the list. Sometimes I add peas at the end.

Put all the ingredients in a blender and then cook on the stove for 15 minutes.

Don’t forget the cheese on toast to go with the soup. Yum!

Update: Ema Jones commented that she likes to add cottage cheese.  That sounds even more delicious!
