Say what? Healthy crust?

Im always on the lookout for ways to incorporate healthy foods into our meals. Our family loves pizza and we usually eat it once a week. Most of the time on Mondays. No one wants to cook after the weekend and who doesn’t love pizza anyway. I haven’t met that person yet. So, I found this recipe for cauliflower pizza crust. I’m no good at baking anything. When it comes to using flour in a recipe, it never turns out right. I found this recipe and thought this was a great idea and tried it. Low and behold, it was a huge success. Everyone loved it! It was soft on the inside and slightly crunchy on the outside. A perfect combination. If you want to try something new here is my recipe.

Pizza crust combination:

Turn oven on 400 degrees

• 1 cauliflower head
(either graded or processed – then cooked in the microwave for 8 minutes – let it cool down)
• a dash of salt and pepper
• a sprinkle of cilantro, chopped up spinach leaves or chopped fresh basil
• add 1 egg,

Mix all ingredients above, then bake crust for 10 minutes.

• Add a layer of barbecue sauce of your choice first
• 1/4 cup Parmesan cheese, 1/4 cup buffalo cheese, 1/4 cup cheddar cheese
(you can use any cheese’s you have on hand – just make sure you include Parmesan)
• Big handful of tomatoes, chopped
• Red Onion, sliced
• Your choice of meat (I like to use shredded chicken or pork)

Cook for 15-20 minutes

Serves 3

Did you know that a cauliflower is grown from a seed?  Well, now you do. Cauliflower is a cruciferous vegetable that may help prevent cancer and is a good source of vitamin C. The orange cauliflower is suppose to be the most tasty. It’s suppose to be a little sweeter than the white kind. Purple cauliflower is suppose to be much better for you then white cauliflower. Not sure about the green one. Have you tried any of the these? Also, if you cook it for 30 minutes or more it decreases the health benefits by 75%. Go make your own cauliflower dish and tell me how it comes out.

What is one of your favorite healthy dishes to make?

Beach Wedding Weekend

If I had to describe Kristi and Jesse’s wedding at the beach this past weekend, I would say it was PERFECTION! We went Friday to get everything ready for Saturday. The weather forcast predicted heavy rains. It didn’t just rain, it poured down like we were in the eye of a hurricane. Then hail started falling from the sky, as large as a quarter. The lights turned out and didn’t come back on until the next morning. The kids loved it because we brought out the candles and the flashlights. Luckily that was enough rain for one night, the next day there was no rain. Instead the weather brought us a double rainbow. It was amazing and just at the right time too. It came out right after the ceremony also bringing with it a blue, purple, fiery red sunset. We couldn’t have asked for better weather. It was very special.

Check out some of these great photos! The bride and groom were a gorgeous and handsome couple.

Extraterrestrial Sounds!

It’s a Sunday afternoon and we are hanging out at home. All of a sudden, out of nowhere my son puts his finger around the rim of my empty glass. I’m like wait, what?? Don’t touch my glass! I was drinking out of that. Then all of a sudden it makes this sound. I was intrigued so we started to get more glasses out from the cupboard to see what sound they made. Each of them were a different frequency. I think we played around with all the glasses for about 45 minutes. It was fun!  See what we came up with or should I say what my son came up with.  🙂

Check this out! TURN UP THE SOUND.

Did you know you could make the glass shatter too?

You can also use the sound to control fire.

And check this video out if you want to see sand and sound. Very cool resonance experiment!

Forbidden Island and King of Tokyo

My brother had this grand idea to have a family game night. It turned out to be loads of fun! I used my brain more than I had planned. We played a few games, but my favorite was King of Tokyo. I enjoyed it so much that we ended buying the other version called King of New York. LOL! I’m still waiting for my brother to come over so we can play that one together.

We are also into Scrabble right now. Did you know, there are 13 words in the official Scrabble dictionary that are impossible to play even using both blank tiles, including KNICKKNACK, PIZZAZZ, and SENSELESSNESSES. Try it!  Also, did you know the name Jenga is based on the Swahili word meaning “to build.” No wonder!

What are some of your favorite games to play?

If you’re looking for a new game yourself, check out King of Tokyo on Amazon.
