Do you like soft, fluffy, buttery, moist cornbread with a yummy brown crust? Yes? Me too! Then this recipe is for you.
Ingredients
β’ 1/2 cup butter (slightly melted)
β’ 1 cup flour
β’ 1 cup cornmeal
β’ 1/4 cup of white sugar
β’ 1 tsp baking powder
β’ 1/2 tsp baking soda
β’ 1/4 tsp salt
β’ 1 cup buttermilk
β’ 1/4 cup honey
β’ 2 eggs
β’ 2 tbsp bacon grease
β’ 1 tsp chia seeds
Heat the oven to 400 degrees. Grease your 9 inch dish or cast iron skillet with butter. Place it in the oven for 10 minutes to get hot. Combine all dry ingredients first. Mix well. Then add in all the wet ingredients. Fold it in, combining everything but donβt over mix. Let it sit for 10 minutes. Bring out your dish or skillet from the oven and pour in your cornbread mix. Put it back in the oven for 20-23 minutes. To see if itβs done stick a knife through it. If it comes out dry, it is ready. If itβs wet, leave in the oven for a few more minutes. Once finished, let it sit for 5 minutes before cutting. Serve immediately.
